The regulations of the Appellation of Origin “Xufa de València”, defines the minimum requirements of the tubers as a unit weight, morphological parameters for groundnut tender and composition in percentage of dry matter, sugars, fats, proteins and starch.

Also the tenth article of the Regulation sets out the different types of groundnut, groundnut differentiating tender of the dry and within the latter and depending on the tuber between “grower”, “chaff” and “low”.

Groundnuts will be selected according to certain parameters, establishing maximum percentages: tubers empty or half-empty, dark or sensory disturbances with assault in the bark or cut, foreign material and of course free of pests, diseases waste and pollutants.
